Do you ever have those mornings when you want something really good and hearty for breakfast but still want to keep it healthy? I do and pizza for breakfast always sounds like a good idea & when it’s lower in carbs, fast and easy, it’s even better. I try to keep most of my recipes healthier since going on my health journey almost 2 years ago. This recipe is truly easy, it doesn’t require making any dough which means, no rise time either and it tastes great.


This easy pizza recipe takes just 15 to 20 minutes to make. It can take longer or less time depending on how you like your eggs. It all begins with the base, a tortilla! I used Siete Almond Flour Tortillas because they’re grain free but you can use any brand you’d like. This recipe is for one personal size pizza and you can add any ingredients you have on hand. I used a combination of green onions, parsley, spinach and oven roasted cherry tomatoes. It was delicious!


This would be a perfect and fun meal to get the kids involved too. Just get the toppings out and let them help assemble them.

Ingredients
For the pizza
  • 1 Siete almond tortilla
  • 1/2 cup chopped veggies of choice (I used green onions, parsley, spinach & roasted red cherry tomatoes)
  • 2 whole eggs
  • Seasonings of choice (I used salt, pepper, paprika & Aleppo chili)
  • Cooking spray
Instructions
For the pizza
Lightly spray bottom of a mini cake or pie pan.
Place tortilla in the pan & ensure the tortilla goes up the sides of the pan (you want it to contain the eggs without allowing them to spill over and beneath the tortilla).
Top tortilla with chopped veggies.
Crack two eggs over the veggies.
Season 
Bake at 375° F for 15 to 20 minutes, more or less depending on how you prefer your eggs.
Enjoy warm!
Tips
  • Ensure that the baking pan you’re using is slightly smaller than the diameter of the tortilla. You want the tortilla to fold up along the sides of the pan to prevent the eggs from leaking beneath the tortilla.
