On the weekends we like to prepare fun ideas for breakfast or brunch. My kids love pizza, so I came out with the idea of a crustless breakfast pizza made just with eggs.


The key is to fluff the egg whites first to make your egg-pizza, then add egg whites and I sneaked in a small handful of spinach.


I blended all the ingredients together, and cooked them in a large pan, lightly buttered and cook in low heat to avoid burning the bottom of this egg pizza. Then you can add any topping you like from cheese, veggies and prosciutto, to name some of my faves.


It's a very simple, yet delicious and fun idea for the whole family to enjoy.



The key is cook the egg crust in low heat for about 3 minutes, then add the toppings you like.

Once ready, let's make out breakfast board. Arrange the breakfast pizza and cut into slices. Add your favorite fruits and breads.

Ingredients
Egg Crust
  • 4 large eggs
  • 1/2 cup of chopped spinach
  • salt
  • pepper
  • Toppings:
  • 2 slices of prosciutto
  • 1/4 of cheese
  • 1/4 cup of chopped cherry tomatoes
  • 1 TBSP of pesto (optional)
Instructions
Breakfast Pizza
First, separate the egg whites from the egg yolk. Then with a hand blender or regular blender, whip the egg whites until they are fluffed.
Then add the egg yolks, salt, pepper and spinach and blend for about 2 minutes.
In a round 10 inch pan, melt the butter and add the egg mix to cook at medium heat for 3 minutes. Then lower the heat and cook for 3-4 minutes. While is cooking add your favorite toppings. I used mozzarella cheese, prosciutto, tomatoes and a drizzle of pesto sauce.
You may want to cover the pan at the end the cooking to make sure egg is cooked trhough.
Tips
  • Adding 2 TBSP of milk to mix, it helps the eggs whites mixture to get fluffier.
  • You may add any toppings you like.
