This salsa verde chicken is so delicious! It is one of my favorites for supper and for meal prepping. The best part is, it only needs a few ingredients and you can customize it from there. I make this dish super simple by using precooked rotisserie chicken and precooked rice, but you could definitely go all out and cook it in a crockpot or however you would like. I literally just mix together shredded chicken and salsa verde, add rice and black beans, and then microwave it until hot! For being the world’s easiest dish, it sure is packed full of flavor!

Ingredients

  • 2 cups cooked shredded chicken (I used rotisserie chicken)
  • 1 cup salsa verde
  • 2 cups rice
  • 1 can black beans
Instructions

Mix together the chicken and salsa verde.
Add in cooked rice and black beans.
Microwave or simmer over the stove until warm.
Feel free to add extra toppings if desired!
