Salsa Verde Ground Chicken Tacos

I don’t buy ground chicken very often, but I had some in the freezer that I needed to use up soon. So I decided to try out some recipe testing and make crispy, salsa verde ground chicken tacos. They turned out absolutely delicious! Once thing about ground chicken is that it needs to be seasoned really well and these tacos turned out so flavorful. I loved this on regular flour tortillas, but I bet they would be just as delicious on corn tortillas, hard taco shells, or even over rice. I think avocado, sour cream, cilantro, and/or lettuce would all be great additions as well, but I did not have any of that on hand. I definitely will be making these again!

Ingredients

  • 2 Tbsp olive oil
  • 2 cloves minced garlic 
  • 1/4 cup chopped onions
  • 1/4 cup chopped peppers
  • 1 lb ground chicken
  • Salt & pepper, garlic powder and cumin to taste
  • 1/2 packet taco seasoning
  • 1 cup salsa verde
  • Juice from 1 lime
  • Mozzarella cheese 
  • Tortillas 
Instructions

On a skillet over medium heat, sauté the garlic, onions and peppers in olive oil and season with salt & pepper, garlic powder and cumin.
Once cooked, move to the side and add in ground chicken.
Chop up chicken and season with salt & pepper, garlic powder and cumin.
When the chicken is no longer pink, season again and then add in the taco seasoning, salsa verde, and lime juice.
Stir and let simmer for a few minutes.
On a separate skillet, add some olive oil to the skillet and the tortillas.
Spoon the chicken mixture into the tortillas and top with mozzarella cheese.
Fold tortillas in half and cook each side until golden brown and crispy.
Serve with extra limes and salsa verde.
