Guacamole Chicken Sandwich

Keeping it all healthy and using healthy fats for this sandwich. It was truly yummy. I highly recommend making this recipe. I loved the flavour and texture of this sandwich. I was able to mix it together in only a few minutes to satisfy a quick and easy lunch hour at home. I keep all of these ingredients on hand all the time, including shredded chicken. I always have a package of Maple Leaf natural shredded chicken, but you could use a grocery store rotisserie chicken too. All you have to do is shred it and add to the guacamole mixture.

  • 1 ripe avocado mashed 
  • 2 tsp diced red onion 
  • 3 grape tomatoes in quarters 
  • Lime juice (half)
  • 1 garlic clove minced
  • 1/2 tsp chilli powder 
  • 1/4 tsp cumin
  • Dash chipotle Tabasco 
  • Pinch salt 
  • 1/2 cup shredded chicken breast
  • Pinch of arugula microgreens
  • Drizzle of chipotle aioli
  • 2 slices sourdough bread

Mix together the first 10 ingredients.
Toast bread.
Drizzle on chipotle aioli
Spread mixture on the toast, add microgreens, and serve.
