Chicken and Quinoa With Mango Sauce

Ingredients for Chicken
1/2 cup of red pepper cut into thin strips
1/2 cup of white or red onion cut into thin strips
1 teaspoon of salt
1/2 teaspoon black pepper
1/2 oregano
1 tablespoon of Olive Oil
4 pieces of boneless chicken
I seasoned the chicken with salt and pepper 1 day before. Reserved in the refrigerator over night.
Ingredients for Mango Sauce
1 mango
1 Roman tomato
1/2 cup of cilantro
1/4 cup of seeded jalapeño
2 tablespoons of white onion
1 lemon juice
Salt and pepper to taste
Ingredients for Quinoa
1 cup of quinoa
2 cups of water
1/2 lemon (optional) I add it because it takes away the strong flavor of the quinoa.
Salt and pepper to taste
Mango Sauce
Put all the ingredients in a bowl and mix well. Try and adjust the salt and pepper to taste. Reserve for an hour in the refrigerator before serving the sauce.
Quinoa
In a deep pan, on medium heat add water, and the quinoa until it boils. Lower the heat, cover and cook for 15 minutes. When it is done, the grain looks soft and translucent. Add the lemon, salt and pepper. Reserve until you are ready to eat.
Chicken
In a pan, heat the olive oil over medium heat, add peppers, oregano, onions, salt and pepper to the chicken and cover for 15 minutes.
When the chicken, peppers and onions are cooked, serve it with the quinoa and mango sauce.
