Pizza is totally a Top 5 food for me.


I won’t even begin to wrap my brain around what those 5 exactly are, but I can guarantee pizza is in there.


Combine that with a top 5 cooking tool and I’m in heaven.


That’s right, I’m talkin’ Cast Iron Pizza.


It’s no surprise I’m obsessed with my cast iron – and check out my Instagram @vics_tricks_to for my favorite method on how to clean! – I use it for almost everything I can.


Plus, it’s a good workout to lift that thing in and out of the oven…


I’ve experimented a lot with pizza and this method is by far my favorite!


For this recipe, I’m using store-bought pizza dough (in the bag, usually by the deli section).


If you want to make your own dough, well then good for you fancypants.


Otherwise, take your dough from the bag and place it into a bowl with a tbsp of olive oil. Cover the bowl with a dish towl and leave out on the counter at room temperature for at least 30 minutes.


It may rise a bit, it may not. But, either way it will be easier to work with this way.

Preheat your oven to 500° with the cast iron in it.


Vic Trick: It’s essential that you preheat the oven with the skillet for 2 reasons: 1) when the dough touches a very hot surface, it’s less likely to stick and 2) the cast iron can crack going from room temp/cold to a temperature that high.


While the oven get to temp, begin working the pizza dough into a circle a little bit larger than the inside rim of the cast iron you’re working with.


I recommend just using your hands to stretch the dough – it should be easy to work with, but feel free to add a little flour if it’s sticky at all – and have fun with it!

Once the oven hits 500°, take out the cast iron and add a pad of butter, spreading it around the skillet with a spatula.


Next, place the dough into the cast iron CAREFULLY. That thing is SO hot.


Now, it’s up to you what you wanna do!


For this bad boy, I mixed some of my favorite pizza sauce with cooked sausage, topped it with some shredded mozzarella and a metric ton of pepperoni.


Vic Trick: I also lined the crust with a little shredded parmesan, which crisps up so nicely in the oven and slides down the edges, making the most incredible crispy cheesy crust. I’m literally drooling just thinking about it, I may need a new laptop.

Put it back into the oven until golden brown and crispy, about 14 minutes.


Let it cool for a few minutes, then slide it out of the pan and onto a cutting board for slicing.


And that’s it!

Of course, you can top your pizza with whatever your heart desires.


Maybe a white pizza with ricotta and spinach? Or maybe a dessert pizza with apples and cinnamon sugar?!

Ingredients

  • 1 lb bag store-bought pizza dough

  • 1 cup shredded mozzarella
  • 1/2 cup shredded parmesan
  • Toppings of your choice

Put it back into the oven until golden brown and crispy, about 14 minutes. Then let cool for a few minutes, slide onto a cutting board for slicing, and enjoy!

      I used my 10 inch skillet and it worked well with building a crust. I also tried in my 13 inch and it was a little more flat, but still delicious!

    I'm embarrased to say this: I've had my cast iron skillets fo 40 years, and I never thought of pizza~~cakes, pies, cornbread and fried chicken all the time----I will be trying this SOON. Thank you for expanding my horizons!!
