Vic’s Tricks To…Gluten Free Pepperoni Pizza Bites
We have a couple friends in the group with a few allergies like gluten and nuts. This has forced me to get super creative in some of the snacks I make when we all get together…
AND I LOVE IT!
Gives me an opportunity to think outside the box and not fall back on certain crutches like bread.
I mean…don’t get me wrong…I loveee bread.
But according to my hips…which never lie…I think I could always use some time away from bread.
Anyway, for a recent football party, I made these Gluten Free Pepperoni Pizza Cups and they were a huge hit!
I will walk you through the steps, but I do not have many pictures of these. Sorry! So I’ll try and be descriptive.
For this recipe, you’ll need shredded Parmesan cheese, shredded mozzarella cheese, pepperoni, and pizza sauce.
Preheat oven to 400°
Add a generous scoop of shredded Parmesan into the base of a mini cupcake tin and place into oven until the cheese melts, less than 4 minutes.
Remove from oven and place small dollop of pizza sauce on each bite. Add a slice of pepperoni, then cover with mozzarella.
Place back into the oven and bake until cheese is melted and a little browned on top.
Remove from tin once cooled. You can place them onto a paper towel to soak up a bit of the grease from all the cheese.
In this case, we were heading to a friend’s place for a football game, so I moved them to an aluminum pan and added a small dollop of pizza sauce with extra on the side for dipping.
I’m telling you, you’ll forget what gluten even was after tasting these bad boys.
Plus, that makes them healthy right?

- 36 slices pepperoni
- 1/4 cup pizza sauce, plus more for dipping
- 1/4 cup shredded mozzarella cheese
Instructions
- Preheat oven to 400°
- Add a generous scoop of shredded Parmesan into the bottom of a mini cupcake tin and place into oven until the cheese melts, less than 4 minutes.
- Remove from oven and add a small dollop of pizza sauce
- Add a slice of pepperoni and cover with mozzarella
- Place back into the oven and bake until cheese is melted and a little browned on top.
- Wait until cooled (you can place onto a paper towel to soak some of the oil). Serve with more pizza sauce for dipping
- Enjoy!

These sound awesome! I think I'll take them to my next carry-in. One question; do you spray the pan with non-stick spray before starting?
