- 1 package (about 10 sheets) of filo pastry
- 1 pound fresh spinach, washed and chopped
- 1 cup crumbled feta cheese
- 1/2 cup grated Parmesan cheese
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried thyme
- 1/4 teaspoon nutmeg (optional)
- Melted butter or olive oil for brushing
Instructions
- Prepare the Filling:
- In a large pan, heat olive oil over medium heat. Add chopped onions and garlic, sauté until softened.
- Add chopped spinach to the pan and cook until wilted. If excess moisture is released, drain and squeeze out any liquid.
- Season the spinach mixture with salt, pepper, oregano, thyme, and nutmeg. Stir well.
- Transfer the spinach mixture to a large bowl and let it cool for a few minutes.
- Once cooled, add crumbled feta and grated Parmesan cheese to the spinach mixture. Mix until well combined. Adjust seasoning if needed.
- Prepare the Filo Pastry:
- Preheat your oven to 375°F (190°C).
- Carefully unroll the filo pastry sheets and cover them with a damp kitchen towel to prevent drying out.
- Assemble the Parcels:
- Take one sheet of filo pastry and brush it lightly with melted butter or olive oil.
- Place another sheet on top and brush again with the fat.
- Repeat with a third sheet.
- Add the Filling:
- Spoon a portion of the spinach-feta mixture onto one end of the filo pastry stack.
- Fold the pastry over the filling to form a triangle or rectangle, depending on your preference.
- Continue folding in a triangular or rectangular shape until you reach the end of the pastry sheet.
- Bake:
- Place the filled filo parcels on a baking sheet lined with parchment paper.
- Brush the tops of the parcels with a little more melted butter or olive oil.
- Bake in the preheated oven for 20-25 minutes or until the filo pastry is golden brown and crispy.
