Ingredients

  • For the filling:
  • 1 pound (450g) fresh spinach, washed and chopped
  • 1 cup crumbled feta cheese
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1/4 teaspoon nutmeg, freshly grated
  • Salt and pepper to taste
  • Optional: 1/4 cup chopped fresh dill or parsley
  • For assembling the pie:
  • 8-10 sheets of filo pastry, thawed if frozen
  • 1/4 cup unsalted butter, melted
  • Olive oil for brushing
Instructions

Prepare the Filling:
In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent.
Add the minced garlic and sauté for another 1-2 minutes until fragrant.
Add the chopped spinach to the skillet. Cook for 2-3 minutes, stirring occasionally, until the spinach has wilted. Remove from heat and allow to cool slightly.
Once the spinach is cool enough to handle, gently squeeze out any excess moisture using your hands or a clean kitchen towel.
In a mixing bowl, combine the wilted spinach, crumbled feta cheese, nutmeg, and optional chopped dill or parsley. Season with salt and pepper. Mix well to evenly distribute the ingredients.
Assemble the Pie:
Preheat your oven to 375°F (190°C).
Place one sheet of filo pastry on your work surface. Brush it lightly with melted butter and then lay another sheet on top. Repeat this process, stacking and buttering each sheet until you have 4-5 layers.
Gently press the filo pastry stack into a pie dish, allowing the excess pastry to hang over the edges.
Spread the spinach and feta mixture evenly over the filo pastry in the pie dish.
Fold the excess filo pastry over the top of the filling, crumpling it slightly to create a rustic look. Brush the top with a little more melted butter or olive oil.
Baking:
Place the pie in the preheated oven and bake for 25-30 minutes, or until the filo pastry is golden brown and crispy.
Once baked, remove the spinach feta filo pie from the oven and allow it to cool slightly before slicing and serving.
