Rosemary Gouda Grilled Cheese

Everyone loves a grilled cheese, but how do we take this classic to the next level? 1. Homemade sourdough. If you've ever made your own sourdough, I guarantee you haven't gone back to store-bought bread. Seriously making my own bread has made me regret ever buying sandwich bread from any grocery store. 2. High quality cheese. Yes, this means you can't use 2 slices of American cheese and call it a day. You can use that for your regular grilled cheese, but not for this one. I'm begging you- use a high quality cheese, and if you can, mix different kinds for extra flavor complexity!
Rosemary Gouda Grilled Cheese

Ingredients
- 1/2 cup caramelized onions
- 1 cup shredded gouda
- 2 tbsp softened butter
- 1/2 tbsp chopped fresh rosemary
- 2 slices of sourdough
Instructions
- Mix chopped rosemary with the butter and spread it onto both slices of sourdough.
- With a little butter in the pan, heat one slice on med-low heat and top with the gouda and caramelized onions.
- Top with the other slice and flip once the cheese starts to melt.
- Remove from heat when both sides are golden brown.

I have been using my George Forman Grill for grilled cheese sandwiches. Cook 2-3 minutes yields nicely browned sandwiches. Will try this combo.
Sounds promising. Have made grilled cheese with caramalized onions, but never tried it with Gouda or sourdough bread. Must try. .
