Everyone loves a grilled cheese, but how do we take this classic to the next level? 1. Homemade sourdough. If you've ever made your own sourdough, I guarantee you haven't gone back to store-bought bread. Seriously making my own bread has made me regret ever buying sandwich bread from any grocery store. 2. High quality cheese. Yes, this means you can't use 2 slices of American cheese and call it a day. You can use that for your regular grilled cheese, but not for this one. I'm begging you- use a high quality cheese, and if you can, mix different kinds for extra flavor complexity!

Ingredients

  • 1/2 cup caramelized onions
  • 1 cup shredded gouda
  • 2 tbsp softened butter
  • 1/2 tbsp chopped fresh rosemary
  • 2 slices of sourdough
Instructions

Mix chopped rosemary with the butter and spread it onto both slices of sourdough.
With a little butter in the pan, heat one slice on med-low heat and top with the gouda and caramelized onions.
Top with the other slice and flip once the cheese starts to melt.
Remove from heat when both sides are golden brown.

    I have been using my George Forman Grill for grilled cheese sandwiches. Cook 2-3 minutes yields nicely browned sandwiches. Will try this combo.
