This baked brie with jam is snuggled in puff pastry, brushed with an egg wash, sprinkled with salt, and served melty all over some crackers. Convinced to make this yet? I should also mention it's incredibly easy, and only takes five ingredients.

Also known as baked brie en croute, this has got to be one of the greatest entertaining appetizers of all time. It requires few ingredients, it's extremely easy prep, and it takes less than half an hour, total. On top of all that, it's completely delicious.

What is Brie Cheese?


Brie cheese is a beautiful, creamy, luxurious type of cheese from France. It has flavors reminiscent of butter, but with earthy notes baked in. Lots of people also report nutty flavors as well.

The flavor is fairly mild, which is why it does so well with a wide variety of toppings.


Do you Need to Remove the Rind?


I never remove the rind from my brie unless absolutely necessary. It's totally edible, and very delicious.

Even when it's wrapped in puff pastry, I still find it helps to keep the whole package together. It also makes it much easier to add the jam and toppings when the rind is still on.

Ingredients


This ingredient list is going to be quick and dirty. Note, the egg wash is completely optional and not pictured here. It does help give the pastry a nice golden color though.


  • Brie cheese: we have to have a star of the show. Brie is mild, soft and creamy. It also melts beautifully, which makes it perfect for this recipe.
  • Puff pastry: because why wouldn't we wrap our cheese in carbs? In all seriousness, this helps hold the brie together, adds a great, flaky texture, and just tastes amazing.
  • Fig jam: the sweetness in this jam really pairs well with the brie.
  • Rosemary: rosemary is here to balance out that sweetness with some herby, earthy deliciousness. It deepens the overall flavor of this dish.
  • Egg wash: just some egg and cream to make our pastry golden brown.
  • Sea salt: for garnish, and to balance out the recipe.

How to Make Baked Brie with Fig Jam


Step-by-step, here's what you're going to do.


Step 1: Roll the Puff Pastry


Actually, preheat your oven first, to 375F. Then, roll your (thawed) puff pastry on a lightly floured surface. You don't need to be too exact about this, just make sure you've got enough pastry to completely cover the wheel of brie.

I measured mine a couple of times before it worked out.


Step 2: Assemble


Place your brie in the middle of the pastry. Spoon and spread the fig jam over the brie. (Note, you can score the brie like I did in the video, but this increases the chances of it melting everywhere. I do this to make sure the jam and brie mix well, but honestly, it doesn't make that much of a difference).

Sprinkle the rosemary on top, and fold the corners of the puff pastry into the middle. Make sure the brie is tightly encased.


Step 5: Egg Wash and Bake


The egg wash is optional, but gives the pastry a nice glow. Just mix up one egg and two tablespoons of cream, and brush it over the top.

Sprinkle with sea salt, and bake for 25 minutes until golden brown. The brie should be nice and melty by now.


Step 6: Serve!


Serve with crackers, and watch it disappear.

Baked Brie Topping Variations


The different flavor profiles you can use with this recipe are truly endless. Try my baked brie with caramelized onions and balsamic vinega r for a start. After that, you can swap fig jam out for basically any other type of jam, but here are a few combos that I love:


  • Cranberry and orange zest (this one is perfect for Thanksgiving and Christmas!)
  • Maple syrup and pecans
  • Honey and pistachios
  • Roasted garlic and rosemary
  • Raspberry jam and balsamic vinegar
  • Apples, maple syrup and walnuts
  • Bacon and dates
  • Pears, honey and cinnamon


You can make all of these options with or without puff pastry. Although, if you're using a runnier ingredient, like maple syrup or honey, try to find as small of a baking dish as you can find for the brie, just so it doesn't run all over the place.

Tips & Tricks


  • Make sure you're using a wheel of brie, not a wedge. That rind helps keep everything together.
  • Do your puff pastry up tight! It's not the end of the world if some of the melty cheese escapes, (happens to me all the time), but it's nice if it stays inside the puff pastry.
  • I like to score my rind on the top so the jam gets down and spreads around. You don't have to do this though, it definitely ups the chances of the cheese escaping!


Reheating & Storage


You can keep any leftovers (hah) in an airtight container in the fridge for a couple of days. To reheat it, throw it back in the oven at 350F until it's melted again. It won't look as pretty as the first time, but it will be just as good!

Ingredients

  • 1 8z wheel of brie cheese
  • 1 sheet puff pastry thawed
  • 1/4 C fig jam or fig spread
  • 1 tablespoon fresh rosemary chopped
  • 1 egg for egg wash
  • 1 tablespoon milk for egg wash
  • sea salt for garnish
Instructions

Preheat your oven to 375°F.
Lightly flour a clean surface to roll the puff pastry on. Roll the pastry until it's large enough to completely wrap the brie cheese in.
Place the brie wheel in the middle of the pastry. Spoon the jam over the brie. Sprinkle on the chopped rosemary.
Fold the excess pastry over the top of the brie, so it's completely enclosed. Note: I don't have an expert way of doing this to make it look beautiful! Just do what you need to do 🙂
Place the wheel in a small baking dish.
Combine the egg and cream. Brush over the top of the pastry. Sprinkle with sea salt.
Bake for 25 minutes, until the pastry is golden brown.
Serve piping hot, with crackers.
Tips
  • Feel free to switch up the type of jam you use, you can really use whatever you'd like!
  • Try adding some nuts, like walnuts in there too.
