Apple Berry Galette
When you have leftover puff pastry the only logical thing to do is make a simple and delicious Galette!
If you have never heard of a Galette, it can best be described as a combination between a pastry and a pie. I needed to make something quick using a sheet of leftover puff pastry that I had thawed earlier that day, and since I also had some leftover fruit I decided to use that up as well in this light and delicious dessert.
I love using premade puff pastry sheets for desserts as they require no mixing, kneading or measuring out ingredients. Puff pastry is light and fluffy, a bit crunchy and always looks very impressive when you serve it to your guests.

To make this Apple Berry Galette begin by making the fruit filling. I like to toss the fruit in a bit of cornstarch to help thicken up the juices that will be produced during baking. This also keeps the puff pastry from becoming soggy.
Next roll out a thawed sheet of premade puff pastry onto a parchment paper lined cookie sheet.
Add the fruit filling to the center of the puff pastry.
To hold all the filling in, start by folding in one corner of the pastry and then work your way around the entire Galette overlapping the pastry. This creates a pretty pleated look. Give the pastry a brush of egg wash and bake in a preheated oven for 40 minutes.
The Galette should have beautiful golden color when finished. Remove from the oven and let cool for 10 minutes.
Dust with some icing sugar before serving and enjoy!

Ingredients
- 1 sheet thawed puff pastry
- 2 apples
- 1/2 cup fresh berries (I used blackberries and blueberries)
- 2 tbsp granulated sugar
- 1 tbsp cornstarch
- 1 egg
- icing sugar
Instructions
- Preheat oven to 375
- Wash and thinly slice the apples. Add them to a bowl along with the berries. Sprinkle with the granulated sugar and cornstarch and gently toss.
- Roll out a thawed sheet of premade puff pastry onto a parchment paper lined cookie sheet.
- Add the fruit filling to the middle of the pastry.
- Start by folding in one corner and then work your way around the entire Galette overlapping the pastry.
- Give the pastry a brush of egg wash and bake in a preheated oven for 40 minutes.
- Remove from oven, and dust with icing sugar when cooled.
- Enjoy!
