Goat Cheese and Prosciutto Crustini

Was invited to a friends house for dinner and offered to bring an appetizer. I feel like I have my tried and true appetizer recipes but was looking for something new! Insert goat cheese? My friends and I love goat cheese and prosciutto and really they are a match made in heaven, for us anyway. So I scoured the internet for ideas and came up with the most delicious appetizer I’ve had in a long time. My friends were so impressed and we ate an entire batch of the crustini in about 5 minutes flat. Keep reading if you’re looking for something new sure to impress!

Ingredients

  • Small Bread Rounds

  • 1 Shallot

  • 1 Tbsp Minced Garlic

  • Half cup diced spinach

  • 3 Tbsp Olive Oil

  • 2 Tbsp Balsamic Vinegar

  • 1 Tbsp Honey

  • Goat Cheese

  • Thin sliced Prosciutto, about 6 slices
Instructions

Place bread rounds on a foil lined baking sheet and spread with goat cheese.

Bake bread rounds with goat cheese 4-5 minutes at 350 degrees until bread has crisped slightly and cheese has softened.

In a pan with olive oil sauté diced shallot and minced garlic. Season lightly with salt and pepper.

In a bowl mix olive oil, balsamic vinegar, honey and season with salt and pepper.

When onions and garlic are cooked, add in balsamic mixture and cook for one minute longer. Remove from heat.

Add diced spinach and mixed until wilted.

Now it is time to top your goat cheese bread rounds with rough pulled pieces of prosciutto.

Then spoon some of the shallot and balsamic mixture on top of each bread round and serve.
