Ingredients

  • For the waffles:
  • 2 cups all-purpose flour
  • 2 tablespoons granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1 3/4 cups milk
  • 1/2 cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • For the toppings:
  • 1 cup plain Greek yogurt
  • 4-6 fresh figs, sliced
  • 1/2 cup almonds, toasted and chopped
  • Honey for drizzling
Instructions

Preheat your waffle iron according to the manufacturer's instructions.
In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.
In another bowl, beat the eggs and then add the milk, melted butter, and vanilla extract. Mix until well combined.
Pour the wet ingredients into the bowl with the dry ingredients. Mix gently until just combined. The batter may be slightly lumpy, which is okay. Avoid overmixing, as this can lead to tough waffles.
Lightly grease the waffle iron with non-stick spray or a small amount of melted butter.
Pour the appropriate amount of batter onto the preheated waffle iron, then close the lid and cook according to the manufacturer's instructions until the waffles are golden brown and crispy.
Place a cooked waffle on a plate.
Spread a generous spoonful of Greek yogurt over the waffle.
Arrange the fresh fig slices on top of the yogurt.
Sprinkle the toasted and chopped almonds over the figs.
Finish the waffle by drizzling honey over the toppings. The honey adds a touch of sweetness that complements the flavors.
