Spring is coming to an end but all those summer berries will soon be coming out fresh and in season ready to be topped on those green salads. Do not forget to add the little crunch and sweetness of some sugared nuts. It is oh so good! While you can buy nuts (pecans and walnuts) already caramelized or sugared in a very pricey, small pouch at the grocery store, the most cost effective way is to buy your nuts in bulk and sugar them yourself. It only takes two ingredients (sugar and nuts) and you are in business. You can freeze the nuts and pull them out and make small batches at a time. Once you start putting these sugared nuts on your salads you won't be able to stop! They also make for a good topping for fall salads that use pears and gorgonzola cheese...yum! You can use these with homemade trail mix, ice cream topping, snacking, you name it.

I bought this big bag of walnuts at Costco. I took out what I needed and put the rest in the freezer to keep them fresher a little bit longer.

Add your nuts and granulated sugar to a pan and set to medium heat.

Keep stirring until the sugar caramelizes and coats the nuts.

Transfer the nuts to a lined cookie sheet to cool. Try not to eat them while they cool...I dare you! They are so addicting!

Top your summer salad for the extra crunch and sweetness. This is my favorite summer salad! I love feta, strawberries, and these sugar nuts on top of greens topped with a raspberry dressing...are you drooling yet?

Ingredients

  • 2/3 C Walnuts or Pecans
  • 1/4 C granulated sugar
Instructions

Mix nuts and sugar in a skillet over medium heat until the sugar is melted.
Stir well to coat.
Cool on a foil or parchment lined cookie sheet.
Store in a ziploc bag in the freezer for several months or in the fridge for several days.
