Easy Chicken Fried Rice

Chicken fried rice is a staple in our house. It is so easy, decently healthy for you, and it is pretty quick to make. And it is obviously delicious! We love to have the leftovers for lunch the next day. You only need a handful of ingredients and you can totally customize the veggies for any picky eaters you may have. I just use the frozen mixed veggies that come in a bag with carrots, peas, green beans, and corn. Sometimes I will also add bits of broccoli if I have it on hand. It is a quick and easy meal that will leave everyone satisfied.

Ingredients

  • 1 Tbsp oil
  • 1 large chicken breast
  • 1/2 tsp garlic powder
  • 1/4 tsp paprika 
  • Salt & pepper to taste
  • 1 cup mixed veggies 
  • 3 cups cooked rice
  • 3 eggs
  • 2-3 Tbsp soy sauce
  • 2-3 Tbsp yum yum sauce 
Instructions

Heat oil in a large skillet over medium heat.
Dice chicken and season with garlic powder, paprika, salt & pepper and add to skillet.
Cook until chicken reaches 165° and is no longer pink.
Add the mixed veggies in and cook until softened.
Add in the cooked rice then scramble in the eggs.
Once everything is mixed together and the eggs are cooked, season with soy sauce and yum yum sauce.
Top with additional yum yum sauce if desired.
