How to make a bowl of plain quinoa
- Rinse the quinoa in a strainer.
- Boil 1 part quinoa with 2 parts water, and then simmer for 15 minutes.
- Let stand for 5 minutes.

This is a one bowl recipe. You won’t get a lot of pots and pans dirty. These quinoa cups make a simple and healthy breakfast. I love these because the kids can eat them on the way to school. They are also great for breakfast on the go, or to heat up once you get to the office.
Modifications
If you’re dairy free, choose a cheese that will work for you.
If you’re vegetarian, swap the ham for extra veggies. Onion, red and orange peppers, or olives would work well with the other ingredients.
The great thing about this recipe is you can make it to fit any diet. If you have kids adding bits of sausage or bacon would work well. This is also a great way to get an additional serving of vegetables for them each day.
They won’t think twice about the spinach if they’re eating a muffin.

Ingredients
- 1 Cup Cooked Quinoa Cook According to Package Directions
- 2 Large Eggs
- 1/2 Cup Shredded Cheese
- 1 slice Cooked Ham diced
- 1/2 Cuo Chopped Spinach
- 1/6 t pepper
- 1/4 t salt
Instructions
- Preheat Oven to 350°
- Spray Muffin Pan or use muffin liners
- Mix all ingredients in a bowl
- fill each cup ⅔ with mixture
- Bake for 25-30 minutes
- Cool for 5 minutes then remove from pan
