Garlic Quinoa Tabbouleh
Who is down to try this new spin on the traditional tabbouleh recipe? I promise it's as tangy and delicious.
The traditional tabbouleh recipe is made with couscous, parsley, onion, tomatoes and lemon juice.
I decided to give it an interesting twist and swap the couscous fro garlic quinoa. It is a game changer. You should totally give it try!
Simple ingredientes;
- garlic quinoa
- tomatoes
- parsley
- white onions
- lemon juice
- olive oil
- salt + pepper
It is great as salad, as a dip, or simply just by itself.
My favorite way to serve it with lemon caper baked salmon, a splash of flavors in every bite. This is is great dinner idea for anytime of the year, specially in the summer. It is very satisfying, healthy and tasty meal.

Garlic Quinoa Tabbouleh

Ingredients
Garlic quinoa
- 1 cup of uncooked quinoa rinsed
- 1 3/4 of water
- 1 garlic clove
- 1/2 tsp of seasonings
Tabbouleh
- 1 cup of cooked quinoa
- 1/2 cup of chopped parsley.
- 1/4 cup of chopped white onion
- 1/2 cup of diced tomatoes
- 2 TBSP of lemon juice
- 1 TBSP of extra virgin olive oil
Instructions
- Combine the quinoa and water in a medium pot. Bring it to boil, cover, reduce heat and simmer for 15 minutes.
- Remove from the heat and let it sit, covered for 10 ore minutes.
- Fluff with a fork.
- Once the quinoa is cooked, let it cool down before mixing with the other ingredients.
- 4.In a large bowl, mix the quinoa, parsley, onions, tomatoes, olive oil, lemon juice and season with salt + pepper to taste.
Tips
- This will be perfect as a dip with pita chips.
- Also, great as a side salad and the perfect pairing for lemon capers baked salmon.

What seasonings would you suggest that give the best flavor?
This recipe doesn't make sense. First you are supposed to cook 1 cup of quinoa with garlic. Then you are supposed to combine 1 c. of cooked quinoa with other things. What do you do with what's left from the garlic quinoa after you've taken out 1 c.? (It swells when it cooks.)
