The meal that got me a ringšŸ¤£ Just kidding, but really this tortellini harvest bowl is my and my fiancĆ©s all time favorite supper. Especially now that the temps are dropping and it is starting to feel like fall. It is the perfect comfort food to make when you want something different! We have it literally every week. I really like it with broccoli or Brussel sprouts added right in, so you can definitely add that or try another veggie like zucchini or squash. But my fiancĆ© is very picky, so if I do have a veggie, I will usually have it on the side.

Ingredients

  • 4 strips of bacon
  • 1 large chicken breast, diced
  • 1 sweet potato (about 2 cups chopped)
  • 2 cups frozen tortelliniĀ 
  • 2 Tbsp olive oil
  • 3 Tbsp butter
  • 4 minced garlic clovesĀ 
  • 1/2 tsp paprika
  • 1 tsp garlic powder
  • 1 1/2 tsp thymeĀ 
  • Salt & pepper to taste
  • 1/4 cup parmesan
Instructions

Preheat cast iron skillet on medium low heat until warm.
Cook bacon.
While the bacon is cooking, season diced chicken with 1/4 tsp paprika, 1/2 tsp garlic powder, 1/2 tsp thyme, and salt & pepper.
Once bacon is done cooking, remove from cast iron, cut into pieces and set aside.
Cook the chicken on the cast iron right in the bacon grease.
While the chicken is cooking, peel and chop sweet potato, add to a bowl with 2 Tbsp olive oil, the remaining 1/4 tsp paprika, 1/2 tsp garlic powder, 1/2 tsp thyme, salt & pepper.
Toss to coat.Ā 
Air fry sweet potatoes at 390Ā° for 18-20 minutes.
While the sweet potatoes are air frying and the chicken is cooking, boil water and cook tortellini according to directions.Ā Ā 
When the chicken is done, remove from the skillet, add the butter, minced garlic and the remaining 1/2 tsp of thyme to the skillet.Ā 
Once garlic is fragrant, add the tortellini, chicken, sweet potatoes, and bacon. Coat everything with the garlic butter and then top with some parmesan!
