This Red Pesto Chicken Pasta Bowl is a quick and easy dish that's perfect for easy weeknight dinners or meal prepping lunches in advance. It is a versatile recipe and you can use your own favourite vegetables and protein, but I find the ingredients listed offer a delightful balance of savory, nutty, and aromatic flavours.


The vibrant red pesto, which is often overlooked in favour of traditional green pesto, is made from sun-dried tomatoes, basil, garlic, pine nuts, and Parmesan cheese. Ingredients

  • ¼ cup red pesto plus more to taste
  • 2 tablespoons lemon juice
  • 1 cup mayonnaise plus more to taste
  • Salt to taste
  • Freshly ground black pepper to taste
  • 1 lbs dry pasta of your choice
  • 4 chicken breasts, cut into bite sized pieces
  • 1 tbsp olive oil
  • 3 spring onions, trimmed and sliced
  • 3 jarred roasted red peppers sliced into small strips
  • 1 handful fresh basil, torn
  • 1 cup freshly grated parmesan cheese
Instructions

Cook your pasta according to packet instructions, then drain and set aside.
Heat the oil in a frying pan and add the chicken. Season the chicken with a pinch of salt and pepper and stir fry for approx 8 minutes until cooked.
Mix the cooked chicken and pasta together with the chopped vegetables in a large bowl.
Mix the mayonnaise, lemon juice, pesto, salt and pepper in a small bowl and tip into the pasta salad.
Add the basil leaves and parmesan cheese to the bowl and stir everything together well before serving.
