Indulge Your cravings with the simplest Pumpkin Gnocchi Recipe!
With just 2 ingredients and a mere 3 Weight Watchers points per serving, this diet-friendly alternative is lower in calories than traditional gnocchi. Plus, it's kid approved! The kids couldn’t taste the pumpkin at all so it’s a great way to also sneak extra veggies in your family meal!
For a fun twist, shape the gnocchi into adorable pumpkins using only a toothpick and a bit of rosemary.
I savoured mine by lightly tossing them in extra virgin olive oil, pan-frying with sage, and adding a dash of salt and paprika.
These gnocchi also pair wonderfully with a rich tomato sauce, which happens to be my kids' top choice!

Ingredients for 4
- - 200gr pumpkin purée
- - 120gr plain flour or gluten-free four (I’ve used a mix of rice and buckwheat flour)
- - A sprinkle of salt (optional)
Instructions
Method
- Mix the ingredients until you get a compact mixture.
- Transfer on a board, sprinkle some flour and divide the dough in 4 parts.
- Turn each part into long ropes and cut little cubes out of it.
- You can cook them like that or you can make little pumpkins.
- Cook in boiling water and take out when the gnocchi start to float on the surface.
- Enjoy with your favourite sauce!
