This is a family recipe from way back. I remember my mom making these on a Sunday. She would make them with the broth from a roast baked hot and tender in the oven. I do not use a pasta machine to make these I want them to puff up in the broth. You can make them into strips like I did or little squares as a dumpling of sort. The thing to remember to do is put them in the refrigerator for an hour before cooking. I make a well with my flour and very slowly and precisely keep going with my fork or hand bring that flour into the whipped eggs. The sides of your bowl should have a ring of dry flour around it as you go until you combine it all together. Hopefully this makes sense. Beat your eggs first before putting them into the flour "well". Do not mix together for a long time it doesn't have to be perfectly mixed and the more you do this the harder the noodles will turn out. So, a light hand. with the mixture. I roll mine out onto more flour so it doesn't stick to your board or counter.

Mine are never perfect looking that's how the kids always know they are homemade they say.

Put flour on your board and rolling pin.

I roll mine to about 1/8" thick.

I use a pizza cutter to cut my strips.

Ingredients

  • 2 C All purpose flour
  • 3 Eggs
  • 1 Egg yolk
  • 1/2 t Salt
  • 5-6 T cold water
  • 2 C Broth your choice.
Instructions
Homemade Noodles
Mix your salt and flour together and make a well.
Beat your eggs and egg yolk lightly.
Add your eggs to the middle of the well.
Add the water to the egg mixture.
Carefully use a fork or your hand to bring the flour into the egg mix until combined together.
Refrigerate the dough for an hour.
Roll out onto your floured board about an 1/8" to 1/4" thick.
Cut into strips with a floured pizza cutter.
Drop into boiling broth and cook for an hour.
Serve warm.
