Instant Pot Chicken Linguine Pasta

On busy weeknights, a quick, easy dinner is a must. This Instant Post linguini dinner is perfect for those nights when you have sports, school events, meetings, or need relief from mid-week burnout.


This single-pot dinner will be a huge hit for your entire family. It will likely become one of your regular go-to’s.


I typically hit my mid-week burnout on Thursdays. I’ve made dinners the previous four days. We’ve had after-school activities. The clutter in the house is begging to be cleaned up.


The laundry needs to be done. Tired parents know what I’m talking about. We all hit this burnout at some point in the week, and deciding what’s for dinner, preparing it, and then cleaning the kitchen sounds like the last thing you want to do.

You will love this easy one-pot dish because of minimal cleanup. You can make it as fresh as possible by using freshly grated cheese, freshly pressed garlic, and freshly chopped herbs.


Or, if you’re hitting that burnout, pre-packaged everything makes this dish equally as delicious. The only dirty dishes from cooking you will end up with are- a knife (to cut the chicken and onion- cut the onion first to save some time on washing the knife), a cutting board, a spoon for stirring, and your instant pot.


If you like to measure, you will also have measuring cups, but I pour with love, and it always works out.

To save time on dishes, start by chopping your onion. One of the best things about this recipe is adding as little or as much as you want. I will list the measurements in the ingredient list below, but I prefer to save myself more dishes and eyeball most items.


Next, cube 1-4 chicken breasts, depending on how many people you feed. You can season it to your liking. I like using garlic powder, seasoning salt, and a sprinkle of pepper.


Add a drizzle of olive or avocado oil to your instant pot- on the sautee setting. Once your pot is heated, toss the chicken and cook for 4-8 minutes. Once the chicken begins to brown, add the diced onions, and mix until soft and fragrant.

Add 1/4-1/2 cup of white wine. It’s okay if you have kids under 21, the alcohol in the wine will cook off, and you will be left with delicious flavors.


This also helps to remove the flavors of the chicken and onion from the bottom of the pot. Cook the chicken and onions in the wine for 3-5 minutes.

Next, add one can of diced tomatoes and garlic. I like to use jarlic (garlic from a jar), but if you prefer fresh, the flavor will be lovely- 1-2 cloves will be perfect.

While your Instant Pot is still on sautee, add in one cup of Chicken Broth. You can use the prepackaged broth if that’s what you have around. I keep the powdered chicken broth in the house and mix it with water. While this step adds a different dish to wash, it’s a less expensive option if you’re on a budget and has a longer shelf life.

After adding the stock, you will want to add your noodles. Linguine noodles are best for this recipe. However, fettuccini noodles can be substituted if you’re in a pinch.


You will have to break the noodles in half to fit them into your Instant pot. Give the noodles a quick stir to ensure they’re all covered in liquid.


Time for pressure. Place the lid for your Instant Pot on, and cook for four minutes under manual pressure. If you’re using your Instant Pot for the first time, it takes several minutes for your pot to go under pressure.

The Finishing Touches


For this recipe, I manually release the steam. Remove the lid from your instant pot, then add flavor and toppings before serving.


Mix the pasta with chicken, onions and tomatoes to ensure you break apart any noodles that may have clumped together.

Add in 1/4 cup real bacon bits, 1 cup fresh spinach leaves, and 1/2 cup freshly grated parmesan. Mix using a pasta serving spoon until everything is thoroughly combined, and serve with  french bread

Parents know the struggle of getting their kids to eat vegetables. This recipe is an excellent way to incorporate veggies into your meal. However, if your kids can sniff them out, this dish is equally as delicious without spinach.

Mozzarella is a great flavor substitute if you don’t have grated parmesan cheese.

Simple And East Cleanup

Great Multi-Day Meal

If you like to meal prep or make a dish with enough leftovers for lunch the next day or two, this dish is easy to adjust, so you have enough leftovers.


When reheating this pasta the next day or two days later, cover it with a damp paper towel and microwave it for 30-60 seconds.

Ingredients
Instant Pot Chicken Linguine Pasta
  • 2-4 Chicken Breasts Cubed
  • ¼-½ Cup Diced White or Yellow Onion
  • ½ Cup White Wine
  • 1 Cup Chicken Stock
  • 1 Can Diced Tomatoes
  • ½-¾ Cup Fresh Baby Spinach
  • ¼ Cup Bacon Bits
  • ½ Cup Grated Parmesan Cheese
  • 1-2 tbsp Olive Oil
  • 1 TBSP Garlic Powder
  • 1 TBSP Garlic (fresh or jar)
  • ½-1 Box Linguine Noodles
Instructions
Step by Step
Dice Onion and set aside
Cube Chicken Breast season to your liking
Drizzle Olive Oil into Instant Pot
Turn Instant Pot or Pressure Cooker to Saute
Add Chicken Breast and cook for 5-7 minutes, stirring regularly
Add onions to Instant Pot, stir and cook for 3 Minutes
Add Wine and Mix. Using a Plastic mixing spoon, scrape the bottom of the bot to remove all the stuck-on flavors
Add a can of diced tomatoes
Add Chicken Stock
Break Linguine Noodles in half and add to the Instant Pot
Mix everything and ensure all noodles are covered in liquid
Add the lid to Instant Pot and manually put it under pressure for 4 minutes
Manually release pressure
Stir to combine all ingredients in the Instant Pot
Add Fresh Spinach, Bacon bits, and grated parmesan cheese and stir
Serve with fresh bread, and enjoy
Tips
  • If you want to make this a creamy dish, you can add 1/4 c heavy cream at the end of cooking.
