A twist from a classic pasta with pesto.


I love pesto! It’s a weekly staple in our house, but when I think of comforting pasta I always crave something a bit creamier and richer than the simple basil sauce, and this hits just the right spot and adds the extra layer of flavour and sauce that is needed to make it a real craving food, that everyone will love, from the adults to the kids. Plus it's a cheeky way of adding a touch of veg to it, with the tomatoes. Let me know if you try it and what you think of it!

Creamy Pasta With Pesto and Tomatoes

Ingredients

  • 6.3oz (180g) pasta, I used Macaroni
  • 6 cherry tomatoes, halvened
  • 2 tbsp pesto
  • 2 tbsp Crème Fraîche
  • Few basil leaves
Instructions

Cook the pasta according to packet instructions.
In the meantime, heat up a 1 tbsp of olive oil in a small saucepan, then add the halvened tomatoes and let them soften for a few minutes. Squeeze them down lightly with a wooden spoon until they release the juices and flavour the oil.
Then add the Crème Fraîche, pesto and a few basil leaves. Let it simmer a bit on a low heat until your pasta is ready.
Drain the pasta and mix in with the sauce. Done!

      Hi. It's a type of dairy product that in flavour is between yogurt and sour cream. In Europe it is widely available from any supermarket, but if you struggle to find it where you are you can substitute it for 2 parts sour cream and 1 part full-fat thick yogurt. Hope that helps!
