Nothing says a restful winters morning like taking the time to spice, soak, and slow cook a lovely bowl of porridges with rich flavours to be enjoyed sitting cosy on the sofa. I appreciate that it does sound like a lot of effort to go to for a bowl of oats, but as one of my favourite foods – and believing that with the right effort they can be amazing – I enjoy the therapeutic effects of taking my time with them every now and then. Try to use pears when they are in season for the ultimate sweet and succulent taste.

Ingredients

  • 100g (1 CUP) Oats
  • 250-350ml (1-1.5 CUPS) of any milk or use Water (or 50:50)
  • 1 Cinnamon Stick
  • 3 Cardamon Cloves, crushed 
  • 1 TSP Ground Cinnamon
  • ½ TSP Ground Mixed Spice
  • 1 TBSP Brown Sugar 
  • 1 TBSP Butter
  • Pinch of Salt
Instructions

Measure out the oats and milk in a non stick pan, then add the liquid, cinnamon stick and cardamom cloves and both ground spices then mix well. Leave to soak and infuse for around 30 minutes.
Gently warm the oats over a very low heat on the stovetop for around 20 minutes, adding a little liquid if It starts to become too thick and making sure it doesn’t stick to the bottom of the pan.
When the porridge is 5 minutes from done, heat the butter and sugar in a non-stick frying pan and then add the pears. Cook on either side until golden.
Spoon the porridge into each bowl, then top with the pears and drizzle the brown sugar butter from the pan over the top. Serve immediately.

    I have questions.

    1. What exactly are "ground mixed spice"? Tarragon? Nutmeg? Black peppercorns?

    2. The title mentions pears, but they are not included in the ingredients. Sliced? Chopped? Peeled? Unpeeled? Anjou? Bartlet? How nay? One whole pear per serving? Half a pear?

    A little honey over baked pears makes this a little healthier but just as delicious.
