Overnight Crockpot Sweet Potato Protein Oats
You will need this bowl of deliciousness 🥰 PROTEIN SWEET POTATO CROCKPOT OATS 🍠 intuitive cooking at its best and I think these are my favorite oats everrr! When I thought of this one night I said to myself, sheeezz this is going to taste amazing and I was not wrong! I used my favorite aromatic spices which are, start anise, cinnamon sticks, and cloves. I also add my favorite protein powder to this recipe. It was so simple to make too and if you’re a meal prepper this is a perfect recipe for you. The great thing about it is that it’s very simple to make at a push of a button on your crockpot. I left mine to cook for 8 hours on low heat but play with the time to achieve the texture that you like. Be prepared to wake up to an incredible aroma in your home if you make these overnight.
Although I rarely ever add sweeteners to my oats, I decided this time that I wanted to use pilosillo as my sweetener. The flavor is wonderful and has a hint of a molasses taste. These oats taste delicious and I think it’s a perfect comfort breakfast and perfect for fall.
WHAT IS PILONSILLO
It is a staple in Mexican cooking and baking. It’s an unrefined whole cane sugar, mainly found in Mexico. Story is that it’s been around for over 500 years. It has an earthy, caramel-like taste, I think it’s similar to a very intense brown sugar or molasses but even better. You can find it in Mexican markets. It is pressed into blocks, cones, or even loaves. It’s very easy to store and typically inexpensive. Pilonsillo always brings back childhood memories, I really enjoy the flavor. Give it a try if you ever come across it.

Ingredients
For the oats
- 2 cups rolled oats
- 2 scoops of @drinkorgain vanilla protein powder
- .85 oz of pilosillo
- 4 whole cloves
- 1 to 2 star anise
- 1 large cinnamon stick
- 1 medium to large sweet potato (washed and chopped into 1/2 inch pieces)
- Pumpkin spice to taste
- 6 cups water (you can add your liquid of choice).
For the oats
- Place all ingredients into a crockpot.
- Stir & mix well, ensuring the pilonsillo is dissolved.
- Cover & cook on low setting (I cooked mine overnight about 8 hours)
- Serve warm, garnish with raw pumpkin seeds and Enjoy ❣️
