Rice With Shrimp

Ingredients

2 tablespoons of vegetable oil

1/3 of white onion cut into squares

1/4 orange bell peppers

1/4 red bell peppers

1 tablespoon of garlic

1 tablespoon of sofrito

2 cups of medium rice

1 Powdered Chicken Flavored Bouillon

4 cups of water

1 Sazon with culantro y achiote

1 teaspoon of Adobo

1 teaspoon of Oregano

1/4 black pepper

1/2 salt (optional)

Shrimp 12 oz extra large


Shrimp

You must wash the shrimp well with water and lemon. Add salt and pepper and reserve the shrimp until they are going to be used.


In a deep pan over medium heat add the onion with the oil and cook for 3 minutes. Add the peppers and sauté for 3-4 minutes, add the garlic and cook for 1 minute until it is fragrant.


Add 1 tablespoon of sofrito and sauté for 3 more minutes. Add the shrimp, and sauté for 5 minutes. Add the rice, sauté for 2 minutes, and add the chicken powder (vegetable if desired).


Add 4 cups of water, Sazon, adobo, oregano, salt, and pepper. Mix the rice with shrimp well, cover and reduce over low heat, and cook for 20 to 30 minutes or until it is soft.


Serve with Tostones, salad, or avocado.

For final touches I added cilantro on top

Cook rice cover for 20-30 minutes.

This is all the ingredients I use for this recipe. If you noticed I didn’t add tomato sauce, I decided to pass on this ingredient but you can add 2 tablespoons after you add sofrito.
