I don't eat Shrimp or any kind of seafood really. Although, I do eat Salmon occasionally. Growing up, seafood was not something my Mom would make for a family dinner. Mainly because she knew we wouldn't eat it.

Garlicky Shrimp, Chicken and Broccoli

I took a cooking class that taught me how to handle and make shrimp and fish dishes. One of the questions the Chef asked us was "what is your favorite fish to eat?" My answer was "none". She then asked me why I was in the class. My answer is simple "my family loves seafood and I want to know how to make seafood dishes for them".

I listened intently to all of the instructions during that class. My favorite take away from that class was that you can swap out or add chicken to most shrimp and some fish recipes. That gives me so many more options when looking for new recipes to try.

I changed a few things and of course added some chicken to this recipe to make it my own. I made this recipe in my cast iron skillet. I served it over white rice and it was so good. Let me know if you try it!

Ingredients

  • 3 tablespoons extra-virgin olive oil, divided
  • 6 medium cloves garlic, sliced, divided
  • 4 cups small broccoli florets
  • ½ cup diced yellow bell pepper
  • ½ cup diced green bell pepper
  • ½ teaspoon salt, divided
  • ½ teaspoon ground pepper, divided
  • 1 pound peeled and deveined raw shrimp (21-30 count)
  • 2 chicken breast, cut into chunks
  • 2 teaspoons lemon juice, plus more to taste
Instructions

Heat 2 tablespoons oil in a large pot over medium heat. Add a quarter of the garlic and cook until beginning to brown, about 1 minute. Cook chicken for about 3-5 minutes. Remove from skillet and keep warm.
Add the next quarter of garlic and cook until beginning to brown, about 1 minute. Add broccoli, bell pepper and 1/4 teaspoon each salt and pepper. Cover and cook, stirring once or twice and adding 1 tablespoon water if the pot is too dry, until the vegetables are tender, 3 to 5 minutes. Remove from skillet and keep warm.
Increase heat to medium-high and add the remaining 1 tablespoon oil to the pot. Add the remaining garlic and cook until beginning to brown, about 1 minute. Add shrimp and the remaining 1/4 teaspoon each salt and pepper; cook, stirring, until the shrimp are just cooked through, 3 to 5 minutes. Return the chicken, broccoli mixture to the pot along with lemon juice and stir to combine.
Serve over rice and enjoy!
