Lemon Baked Salmon

Are you time-starved to make a healthy, nutritious dinner? Do you lean towards take-out food after a long workday, only to eat high caloric and less healthy choices? I know I do. This recipe is so easy, delicious, and takes no more than 5 minutes to prepare, 15 minutes to cook and dinner is on the table in less than 30 minutes. In fact, serve with a salad, microwave-baked sweet potato, or air fry sweet potato fries and you have a complete meal in no time. I highly recommend serving the salmon with my garlic dill sauce, which is posted in a separate recipe. Enjoy!

Ingredients

  • 4 salmon fillets - about 5 ounces each
  • 2 tablespoons olive oil
  • ½ teaspoon salt - or to taste
  • ¼ teaspoon cracked black pepper - just a pinch if using finely ground black pepper
  • 2 teaspoons minced garlic
  • 1 teaspoon Italian herb seasoning blend - ¼ teaspoon each dried thyme, parsley, oregano, and basil
  • 1 medium lemon
Instructions

Preheat oven to 450 degrees and grease a large baking pan. 
Pat salmon dry. Drizzle with olive oil and rub on both sides. 
Arrange salmon fillets on the baking sheet and season generously with salt and pepper.
Stir together garlic, herbs, and juice of 1/2 lemon. Spoon over salmon fillets being sure to rub all over the tops and sides of the salmon so it has no dry spots. Thinly slice remaining 1/2 of lemon and top each piece of salmon with a slice of lemon.
Bake for 12-15 minutes until salmon is opaque and flaky when pulled apart with a fork. You can broil the last 1-2 minutes if desired.
Garnish with fresh dill and dill sauce or creamy garlic sauce if desired and serve.
