How to Make Greek Style Baked Cod

  • Preheat the oven to 400 degrees. In a small bowl mix the lemon juice, bread crumbs, garlic, olive oil, and medearranean spice blend.
  • Place the cod into a baking dish and pour the olive oil mixture over the fish. Bake for 15 minutes then remove the cod from the oven and add the diced tomatoes, lemon slices and butter pats. Sprinkle with thyme and oregano.
  • Bake for another 10 minutes and enjoy!

Ingredient Substitutions


Even though this recipe is easy, I used a few other mini recipes to create it. If you don’t want to make your own Mediterranean Spice Blend or Greek Butter here are some substitutions you can use.


  • Instead of Greek Compound Butter you can use unsalted organic butter.
  • If you don’t want to make my Mediterranean Spice blend you can use any kind of Greek seasoning you have.
  • Gluten Free Panko Breadcrumbs: If you don’t need gluten free panko you can use regular bread crumbs.
  • Lemon: You can use lime instead.
  • Tomatoes: Sundried tomatoes would add a nice flavor.

  • Use sundried tomatoes and kalamata olives to garnish the cod in the last five minutes of cooking.
  • You can bake the cod on the stove top instead of the oven to get a nicely seared fish.


What kind of pan should I use to bake cod?


My favorite kind of pan to use for this baked cod recipe is a simple medium size corningware or any other kind of oven safe dish. You can use a pyrex glass as well.

I don’t like to use disposable aluminum foil. The lemon juice will react with the aluminum releasing chemicals from the metal into the food.

Cod is a white fish that has a mild, slightly sweet and delicate flavor. It’s not overtly fishy like salmon or tuna. Since this fish lacks a fishy taste and has very little natural flavor it goes well with almost any kind of sauce.

Lots of people who don’t like seafood do enjoy cod. It’s a great fish for kids and adults who are new to seafood. I wouldn’t say it tastes like chicken but it has a similar mild flavor that most people enjoy.


What Spices Can You Put on Cod?


Cod is a mild flavored flakey white fish so it goes well with almost any kind of spice. You can use an Italian blend of fresh or dried herbs with butter. Or you can make a flavorful cod fillet with Cajun spices. Here are some ideas

The best way to cook cod so that it isn’t tough is to not over cook it. Cod cooks in about 20 minutes in a 400 degree oven. You’ll know it’s done because you will smell it. Another way to tell it’s done is if you look at the cod the fish will be perfectly white instead of opaque.


Salt Brine the Cod Fillet Before Baking:


Another great way to ensure that the cod is not tough is to salt brine it. Soak the cod in salt water made up of 1/4th cup of salt and 2 cups of warm water.

The sodium will help draw more water into the fish and break down the muscle tissue so that it’s softer. The extra water wwilll prevent the fish from drying out. While the breakdown of muscle tissue will ensure that the fillet is succulent.


Do You Rinse Cod Before Baking?


No you should not rinse cod before baking for two reasons. The first one is that it’s a myth that you should rinse fish before you cook it to get rid of germs. All of the germs on the fish will die off in the oven when the cod is baking.

Also all of the germs on the fish will splash all over your kitchen sink and counters spreading germs. So rinsing the cod before baking it will only spread bacteria that can cause food borne illnesses instead of minimizing risk.

If you have heart disease or kidney disease it’s important for you to eat fresh and never frozen cod. Frozen cod is dipped in a salt solution before it’s frozen. This increases the salt content of the fish from 60 miligrams of naturally occurring sodium to 318 miligrams.

If you store the cod in a plastic container the lemon juice could react with the plastic. The acid from the lemon juice will break down the plastic releasing harmful chemicals into the cod. When in doubt, glass is best!

Yes, cod is naturally gluten-free. It is a type of fish and does not contain gluten, which is a protein found in wheat, barley, and rye not in animal flesh.

Simple cod is always gluten free as an ingredient. But if you are talking about cooked cod it could be cooked with other ingredients that contain gluten like panko breadcrumbs. So it’s always important to check for any potential cross-contamination.
