Are you tired of the same old boring eggs and are looking for a fun new way to serve up breakfast? Why not try these simple, yet impressive Bell Pepper Egg Rings!

These little delights take no time at all to prep and offer a unique breakfast presentation. Kids and guests (if you are serving at a get together) will think these are so fun.

You can adapt the recipe to suit your personal taste by changing up the filling ingredients. My go-to is to keep it simple and just add some finely chopped red onions, top with shredded cheese and a simple garnish.

Bacon crumbles, cooked ground sausage, finely chopped mushrooms or broccoli would also make great filling options.

Read below to find out how you too can make this simple and delicious breakfast.

Begin by slicing a bell pepper into 3/4" thick rings. You can use any color of pepper, but I think its fun to use several different ones.

In a lightly oiled pan over medium heat briefly cook the peppers on one side for a few minutes. Just until they are slightly browning.

Flip the peppers and continue to cook for a few more minutes. At this time you can add in the fillings. As mentioned above I kept these ones very basic and simply added in some finely chopped red onions.

Next, you want to make sure that the peppers are sitting very flat on the pan, you can push them down slightly with the flipper to ensure there are no gaps between the peppers and the pan where the egg can leak out. Crack an egg into each pepper, cover the pan and cook for several minutes until the eggs are cooked through (mine took about 4-5 minutes)

You can top the peppers with cheese or eat them as is. If you are adding cheese like I did, I prefer to sprinkle it on the eggs while they are still in the pan, cover for another minute until the cheese has melted and ten remove from heat.

Garnish with some additional chopped red onion, S+P and parsley.

The garnish options are also completely adaptable. Chives, everything bagel seasoning, hot sauce or even tomato would be nice options.

Serve alongside some fresh fruit and buttered toast for a complete hearty and healthy breakfast.

These look so lovely plated, and very easy to set out for guests to serve themselves.

Ingredients

  • 1-2 Bell Peppers
  • 1/3 cup finely chopped red onion
  • 1/3 cup grated cheddar chees
  • 4 eggs
  • Parsley
  • Salt and Pepper to taste
Instructions

Once the eggs are cooked through, add some shredded cheese over them and cover for another minute until the cheese has melted.
Remove from heat and garnish with some additional chopped red onion, S+P and parsley.
