Hello fall and colder temperatures! The weather is calling for all the cozy recipes and comfort food, so I wanted to bring a perfect fall salad to the mix. You can serve it as a side salad or have it as a whole meal as you take a break from the creamy chicken pot pies and soups. The key to this salad is really the maple dijon vinaigrette. It gives it a sweet touch and really provides that fall vibe everyone is looking for. You probably already have the ingredients on hand in your fridge, which makes this recipe extra easy to make on repeat.

Ingredients
vinaigrette
  • 2 tbsp maple syrup
  • 1-2 tbsp dijon mustard
  • 1/3 cup olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
salad
  • 2 cups chopped kale
  • 1/2 honeycrisp apple, diced
  • 1/2 sweet potato, diced & roasted
  • 1/3 cup roasted chicken
  • 1/4 cup cooked quinoa
  • 1 tbsp pumpkin seeds
Instructions

Mix all the ingredients together until fully combined.
Massage onto kale or greens of choice.
Add the salad toppings and mix.
