It's September! But it is also still 90 degrees in Florida so how can I get the fall flavors while keeping it cool? A fall inspired salad. This salad is simple to make, takes little prep work & tastes exactly like fall. I highly recommend cooking seasonally- it gives you something to look forward to, provides the freshest ingredients, and is readily available. My favorite fall foods are sweet potatoes, apples, butternut squash, etc.

Ingredients

Fall Salad

  • 1 bag mixed salad mix
  • 1 apple (thinly sliced)
  • 1/2 cup candied pecans
  • 1/2 cup butternut squash (cubed)
  • 1/2 cup brussel sprouts (halved and/or shredded)
  • 1 tbsp balsamic vinegar

Maple Dijon Dressing

  • 1/8 cup maple syrup
  • 2 tbsp Dijon mustard
  • 1/4 cup olive oil
  • 1/2 lemon juice & zest
  • Sprinkle of salt and pepper

Instructions

Fall Salad

In a medium sauce pan on medium heat, saute brussel sprouts and butternut squash with olive oil and balsamic for 5 minutes until softened
Prepare salad by laying a bed of greens in bowl (amount varies by individual preference)
On top of salad bed place thinly sliced apples, candied pecans, and butternut squash/brusselsprout combo
In a small bowl mix maple syrup, lemon juice, olive oil, dijon mustard, and salt and pepper
Drizzle dressing over prepared Fall Salad and serve

Tips

  • Instead of the maple dijon dressing, you can use a store-bought fall themed dressing
  • You can meal prep the apples, butternut squash/brussel sprouts combo, and dressing to use throughout the week for more salads
