This is a great dressing recipe, another secret recipe from our kitchen in our restaurant. We use this dressing on our baby green lettuce and endive salad. We use lettuce, endive, apples, candied walnuts, and when in season I like to add sliced nectarines and we garnish the salad with fresh dill. The mix of the dill, apples, honey, and apple vinegar is such a winner. This is one of the best sellers on our menu. The dressing is fresh and tangy and the mix of it with fresh sliced apples and candied walnuts is just perfect. It’s important with vinaigrette that you properly make the emulsion in the blender. This recipe is simple, like any basic dressing recipe but if you don’t do it properly you will simply have a broken dressing.

min our kitchen we add a teaspoon of zantham, which is a powder that helps to thicken sauces. If you don’t have this powder of course you can do without. It’s just a trick that restaurants use to help make there creams and sauces thicker without adding other ingredients. It is very important to add the ingredients to the blender and then slowly add in the olive oil so that you create an even emulsion .

This dressing is composed of few ingredients but it’s packed with flavor.

Ingredients
For the dressing
  • 250 grams (8 3/4 oz) honey
  • 200 gram (7 oz) apple vinegar
  • 70 gram (2 1/2 oz) lemon juice
  • 6 gram (1/4 oz) salt
  • 30 ml (1 fl oz) water
  • 300 gram (10 1/2 oz) of olive oil
  • (2 gram zantham- optional)
Instructions

Add to the blender the honey, vinegar, lemon juice, salt, and if you have the zantham now is the time.
slowly add in the olive oil to the blender until fully blended together.
place the mixture in a bowl and slowly add in the 30 ml of water and mix well
