I love dill pickles. For my birthday one year, I was gifted a TUB of dill pickles. I wish I could describe this to you-it was a literal tub. The size of one of those buckets from Lowe's or Home Depot. Probably 5-7 gallons. It was full of the biggest and best dill pickles. I was in heaven.


Naturally, I love dill pickle flavored things (sunflower seeds, chips, popcorn, etc. etc). But a dill pickle dip is something I had never made before. I love fried dill pickles also (spears or chips honestly both are great). I was thinking of how to create that flavor and crunch. The crunch in this dip comes from not only the fresh cut dill pickles, but also the lightly toasted panko bread crumbs included on top of this dip.


This dip was on the salty side, so definitely taste-test before you add your salt so you can ensure it is the right flavor for you. Fresh herbs are best in this recipe, but dried will do in a pinch. I dipped mine in plain ruffled chips and carrots. I was trying to be a *little* healthy with the carrots :D

Ingredients
Dill Pickle Dip
  • 12 oz whipped cream cheese
  • 1 C plain greek yogurt
  • 1 C (good quality) dill pickles, diced (save some for garnish)
  • 1/2 C panko bread crumbs, toasted
  • 3 cloves garlic, grated
  • 1 Tbsp fresh dill
  • 1 Tbsp fresh chives
  • 1/2 tsp onion powder
  • 1 tsp dehydrated onion flakes
  • 1/2 lemon juice
  • pinch of paprika
  • 1/4 tsp black pepper
  • salt to taste
Instructions
Dill Pickle Dip
Stir your cream cheese and greek yogurt together and place in medium sized bowl
Lightly toast your panko
Dice your pickles and garlic. Mince herbs
Mix everything together (while reserving 1 Tbsp diced dill pickle, and 1 Tbsp toasted panko).
Place in medium-large serving dish and refrigerate for at least 1 hour, ideally 2.
Before serving, top with the remaining panko and pickles and enjoy

    Similar to you I have been gifted jars (not tubs! Lol) of pickles as gifts, and as a kid growing up in a large family I used to sneak the pickle jar out of the refrigerator and hide in a nearby park to eat them. This recipe sounds so good other than the yogurt (yuck to me). I wonder if I could sub a low-fat mayo or sour cream.

    Please use panko breadcrumbs, not panic breadcrumbs. I doubt you should go into a panic here.
