This creamy Delicious dip is the perfect appetizer or snack when the garden cucumbers are plentiful! So easy to whip up quickly. It's always a crowd pleaser when I bring it to a party. But I love having it on hand as a snack at home, too.

Ingredients

  • 1 package cream cheese, softened
  • 2 full size cucumbers, or equivalent small ones
  • 1 cup mayonnaise
  • 1 Tablespoon fresh lemon juice
  • 1/2 teaspoon dill
  • 1/2 teaspoon hot pepper sauce
Instructions

Peel cucumbers ( I like to stripe them for interest). Take seeds out with tip of spoon.
Chop cucumbers into small pieces.
Beat softened cream cheese with mixer until smooth.
Add mayonnaise, lemon juice, dill weed and hot sauce of choice ( I used siracha, but Franks or tabasco work, too). Mix until smooth.
Fold in cucumbers.
Chill for 2 hours before serving.
Serve with crackers or veggies. (Very good with the cheese crisps that are available right now)
