Ingredients

  • 28oz Can Diced Tomatoes
  • 10oz Can Rotel
  • 1 Jalapeño (diced)
  • 1 Small Onion (diced)
  • 1/4 Teaspoon Sugar
  • 1 Tablespoon Garlic
Instructions

Combine diced tomatoes, Rotel, jalapeño, onion sugar, garlic & salt in a food processor.
Process until everything is combined.
Tips
  • Add ingredients like lime juice, lime zest, cumin, or fresh cilantro for a deeper and more robust flavor.

      Exactly. I'm sodium restricted. Did not know how much "hidden" salt was in practically everything until I had to read labels!!! Previously, I thought I was "good" just b/c I never used a saltshaker on my food. WRONG! The American diet is "uber" salt-laden...the average person sucking in from 7,000 to 10,000 mg per day!!! The healthy need only 2,500 mg per day (I am restricted to less than that). Too much pre-packaged/canned/fast food. I either make my own salsa from fresh tomatoes/onions /cilantro/peppers & anything else I want to add it (roasted corn, sometimes peaches, etc....) Lemon or lime juice punches up the flavor instead of salt (or my trusty no-salt Kinder's Lemon Pepper seasoning)....OR....I found a NO salt killer salsa at Barron's grocery. It says it's a South American recipe. Whatever, they know how to do it :)
