These healthy gooey vegan protein brownies are a delicious, nutritious dessert. Naturally gluten free, refined sugar free and dairy free, these decadent, moist small batch brownies are packed with protein. Enjoy your vegan dessert with some added protein in less than twenty minutes.

Gooey Vegan Protein Brownies

There is something about brownies that I cannot resist. I truly love them. I especially love them when they are a smaller batch, as its hard to eat a whole casserole dish full when there are only two of us.

Prior to eliminating eggs and dairy from my diet, I would always eat the Kodiak brand protein brownies (which are delish but not vegan). Since then, I was on a quest to create a vegan dupe for the kodiak protein brownies. However, I wanted to make them without regular flour as well, so I swapped out the flour for oat flour.

These gooey vegan protein brownies are extremely fudgy and melt in your mouth. You would never think that these brownies are full of plant protein and are gluten free and refined sugar free.

Gooey vegan protein brownies are easy to make, requiring little ingredients.

These gluten free vegan brownies are great for a nice dessert, but also when you are craving something sweet after lunch (or is that just me?).

They also store very well, so you can prep them for the week as a sweet, healthy chocolate treat!


What Makes These Gooey Vegan Protein Brownies Healthy?


Added Protein- The added protein in these gooey brownies allow them to keep you full for hours! This the protein I used.

High in Fiber - Bananas, which are the heart of this recipe, are packed with fiber! Oats, the other star of this recipe, are also high in fiber. Meaning these delicious treats will not only curb your sweet tooth, but they will you regular (and full!).

Gluten Free Oats- This recipe is made with gluten free oats. Oats are great for you, as they are full of fiber and nutrient!

Refined Sugar Free- These brownies are sweetened with maple syrup and brownies - hello natural sweeteners!

Healthy Fats- This recipe uses coconut oil instead of a heavy oil or butter.


Ingredients for Healthy Gluten Free Protein Brownies


This recipe includes simple ingredients that you likely have in your kitchen! It includes: an overripe banana; oats; chia egg; coconut oil; protein powder; maple syrup; cinnamon; cocoa powder; almond milk; baking powder and soda; and optional dark chocolate chips.

Gooey Vegan Protein Brownies Ingredients

Bananas- An overripe banana is the based of this recipe! A ripe banana will work just as well, just make sure you mash it .. a lot! Just add ½ tsp more of maple syrup to sweeten it.

Oats- I used oats for this recipe instead of flour. While oat flour would work just as well - a money saving type is to put your whole oats into a food processor and pulse until it is fine. I also let some on the chunkier side for added texture - you choice!

Chia egg- You may use flax egg as well, or you may use a real egg if you are not vegan.

Coconut Oil- You may also use canola oil or butter.

Protein Powder- I used Livbody Cake Batter protein powder, but you may use any type you like! I would recommend using vanilla or chocolate, but do note that if you do use chocolate, it will be much more fudgey.

Maple Syrup- A natural sweetener, feel free to use honey instead if you are not vegan.

Cinnamon- If you do not have cinnamon, you may use allspice.

Cocoa Powder- Sorry, no subs for this!

Almond Milk - Any plant based milk will work. Use vanilla or original (sweetened or unsweetened!).

Dark Chocolate Chips - Optional to make them more fudgy!


Tips For Making Gooey Healthy Vegan Protein Brownies


These brownies are incredibly easy to make, of course!

They are small batch, so if you want more than 6 brownies - double the recipe!

Steps To Make Gooey Vegan Protein Brownies

First, you will make the chunky oat flour. Place the oats into the food processor and pulse until they are 75% ground and fine.

Next, place the banana into a large mixing bowl and mash! Mash as much as you can!

Melt the coconut oil in the microwave for 20 seconds until it is liquid.

Then, place all ingredients (other than the chocolate chips) and mix! Once it is well mixed, fold into the chocolate chips. The mixture will be thick, yet smooth.

Then, grease a bread pan and then place the mixture into the pan. Bake for 12-14 minutes at 350 F. Let cool for 15-20 minutes. These brownies will seem

Storage - Store these in an air tight container in the fridge for up to 5 days!

Freezing- I have yet to freeze these no bake bars, but I do believe it would be ok.

Oat Flour - Make your own by pulsing your own oats in the food processor.

Ingredients

  • ▢ 1 overripe banana mashed
  • ▢ 1 chia egg 1 tbsp chia seeds, 4 tbsp of water
  • ▢ 2 tbsp maple syrup
  • ▢ 1/4 cup almond milk
  • ▢ 1 tsp coconut oil melted
  • ▢ 1/2 cup oat flour see notes below
  • ▢ 3 tbsp cocoa powder
  • ▢ 1/2 tsp baking soda
  • ▢ 1/2 tsp baking powder
  • ▢ 1/2 cup protein powder
  • ▢ 2 tbsp dark chocolate chips optional
Instructions

If you are using a food processor, place oats into it and pulse until the oats are 75% ground.
Preheat your oven to 350 degrees F and grease a a bread pan.
In a large mixing bowl, mash your banana.
Add all ingredients, other than dark chocolate chips, into the bowl and mix well.
Once well mixed, fold in dark chocolate chips. Your mixture will be thick and smooth.
Pour your mixture into your pan. You may need to gently pat the top.
Bake for 12-14 minutes. This brownie will not fully baked when you remove it, but it will firm up. Allow it to cool for 15-20 minutes.
Enjoy immediately or store in an air tight container in the fridge for up to 5 days.
