In the mood for some warm, comforting flavors that are plant-based, simple, and zero waste? Me, too! 😉 These vegan turmeric spiced pecans are a real treat. This particular recipe is quite special thanks to:


  1. Its accessibility to those following different diets, especially vegan, gluten-free, oil-free, and refined-sugar free diets.
  2. Aquafaba - or the reserved liquid from canned chickpeas - is a great ingredient that allows you to enjoy chickpeas without the waste. Whipped aquafaba is the binding agent for all the delightful spices that make these pecans truly shine.
  3. Of course, I can't make any nut recipe without some Mammoth pecan halves from Tennessee Valley Pecan Company (that's what happens when pecans are the family business... 😂). Having a delicious nut on hand means you have endless opportunities for snacks, desserts, toppings...you name it!

Vegan Turmeric Spiced Pecans

Ingredients
Whipped Aquafaba
  • 6 tablespoons aquafaba (reserved liquid from can of chickpeas)
  • pinch of cream of tartar
Spiced Pecans
  • 1 1/2 cup pecan halves
  • 1/2 cup whipped aquafaba (this is approximate)
  • 2 tablespoons + 2 teaspoons coconut sugar
  • 2 teaspoons turmeric
  • 2 teaspoons pure vanilla extract
  • 1 teaspoon ground cinnamon
  • pinch of kosher salt
  • pinch of coarse sea salt (optional, for garnish)
Instructions
Whipped Aquafaba
Add the aquafaba to the bowl of a mixer. Toss in the pinch of cream of tartar.
Whisk on medium-high speed for about 4 minutes, or until stiff peaks form.
Turmeric Spiced Pecans
Preheat oven to 300ºF.
In a medium bowl, mix together the whipped aquafaba, pure vanilla extract, coconut sugar, turmeric, ground cinnamon, and kosher salt. The whipped aquafaba will deflate a little, but that is normal.
Add the pecans to the mixture, tossing until all pecans are coated uniformly.
Spread onto a baking sheet, breaking up any clumps and creating an even layer.
Bake for 10 minutes before gently tossing/nudging the pecans.
Return to oven for about 5 more minutes, monitoring to ensure the nuts don't burn.
Remove from oven and allow to cool. Sprinkle with coarse sea salt, if desired.
Tips
  • You will have more whipped aquafaba than is necessary for this recipe. I recommend making more than you need because it whips faster in your stand (or hand) mixer when there is a little more volume in the bowl. If you don't use it all, just refrigerate and rewhip it again when ready.
