If you want a recipe to start off your kids in the kitchen, this is the one! It's the very first one I made with them when they were young toddlers, from 1.5 years old with pre-dosed ingredients, and these cookies are my go-to when I want to make something with my kids even now. They are easy to do with young children, and a super quick sweet fix.


They are made without butter, and are great for those following a dairy-free diet or are lactose-intolerant. If you want to make them vegan, you can make your own vegan eggs combining flax seeds and water too, so really flexible.

Ingredients

  • 1 medium egg
  • 1/2 cup sugar
  • 1/2 cup sunflower oil
  • 1 tsp baking powder
  • Grated lemon zest and juice
  • 2 1/2 cups flour
  • Icing sugar
Instructions

Combine the egg, sugar, sunflower oil and baking powder in a bowl.
Mix in the grated lemon zest and juice. Make sure to only grate the outer layer of the zest. If you get the white bit in your cookies will have a bitter after-taste.
Add flour little by little, incorporating it as you go along.
Once the dough is a little bit more solid and most of the flour has been incorporated, knead it on a floured surface until it becomes elastic and soft. That’s the majority of the job done!
Now put some icing sugar in a bowl and get an oven tin ready with some greaseproof paper on top.
In order to get all the cookies of the same dimension, take a piece of the dough and roll it into a thick sausage, and cut it into bite-sized pieces. Take each piece and roll it into a ball.
Put the little balls in the bowl with the icing sugar and make sure to coat them all evenly before placing them on the baking tin.
Bake at 356°F for about 20 minutes.
