Mint Chocolate Truffles

Is there anything better then holiday treats?! I’m such a sucker for any sweet treat and I absolutely love this recipe! They are a crowd favourite in my house and I always have some on hand for company that pops by over the holidays as these truffles keep SO well in the freezer.


These mint chocolate truffles come together super quickly and with just 4 ingredients! They are silky smooth with a delicious chocolate coating. I like to decorate mine with a little leftover melted chocolate.


Here’s a tip: If it’s hard to find the mint chocolate sandwich cookies, you can opt for the classic sandwich cookie and add in 1/2 tsp mint extract 😊

Ingredients

  • 18 mint chocolate sandwich cookies
  • 6 oz. cream cheese, softened to room temperature
  • 1 cup milk chocolate chips
  • 2 tsp vegetable oil
Instructions

Add cookies to a food processor. Pulse until the cookies are slightly crushed.
Cube softened cream cheese and add it into the food processor with the cookie crumbs. Pulse again until the cream cheese has fully been incorporated and the mixture is smooth. Mixture will be thick!
Line a cookie sheet with tin foil. Begin to form mixture into bite sized balls, about the size of a golf ball. Place rolled balls onto the prepared tray.
Place the tray in the freezer to allow the truffles to set, about 1 hour or so.
When the truffles are set, melt chocolate and oil in a microwave safe bowl on high in 30 second intervals, stirring in between until no lumps remain and the chocolate is smooth.
Take the chilled truffles out of the freezer. Place them one at a time in the melted chocolate. Use a spoon to cover the truffles in chocolate. Once covered, remove with a fork and shake off any excess chocolate.
Place all the coated truffles back onto the prepared tray and allow for 10 minutes in the freezer.
Enjoy right away or keep in a freezer safe container in the freezer for up to 1 month.
