Simple to make for a daily treat yet decadent enough to make a batch for the holiday dessert tray.

This easy no cook truffles recipe makes enough truffles to share with family and friends. It literally takes less that 10 minutes to make these artisan truffles.


Freeze them for up to 2 weeks so you can make them ahead of time for an event.

Weight Watcher Friendly - Yes, you can have dessert on WW. These 2 ingredient chocolate truffles are 7 Points on my WW plan for one homemade chocolate truffle. If you make smaller truffles you could lower the point value, but I made big ones. You may have to plan your points ahead to save room for this dessert but it is worth it.


Since the new Weight Watchers plan is personalized you will have to input the ingredients used to get your exact points.


Easy to make - These 2 ingredient truffles come together in less than 10 minutes.


Kid Friendly - These two ingredient truffles are so easy and fun to make. The kids will love helping decorate them by rolling in sprinkles, nuts, cinnamon or even their favorite cereal. Let them pick some toppings.


Budget Friendly - Costs less than $20.00 for making these truffles. There will be enough to feed family and friends.


Truffle Ingredients:
Only 2 simple ingredients...

12 Ounces of Chocolate Chips - I used Ghirardelli Semi-Sweet Chocolate Chips. You can use a darker chocolate like Ghirardelli Bittersweet for a dark chocolate truffle or use Ghirardelli white chocolate chips for a white chocolate truffle. For a vegan truffle you can melt 4 Ghirardelli Twilight Delight Chocolate Bars.


Cream of Coconut - For this recipe we used a 15 ounce can of GOYA Cream de Coco. You can use any brand.


How to make Two Ingredient Truffles


1: Pour your chocolate chips into a stainless steel mixing bowl.

2: Boil one 15 ounce can of Cream of Coconut then pour the boiling cream into your bowl of chocolate chips.

3: Mix together into a smooth chocolate sauce.

4: Place your bowl in the freezer uncovered until the chocolate is set, about 2 hours.

Freeze your chocolate for 2 hours...

5: Remove from freezer and scoop into truffle balls, then roll in your favorite topping. I like to use a mini cookie scooper for this.

6: Place your homemade truffles back in the freezer until ready to serve. These do not get hard in the freezer they remain soft due to the coconut cream. If you want a firmer truffle that does not have to be frozen you can use 7 ½ ounces of coconut cream with 8 ounces of chocolate chips.

What toppings are good for homemade chocolate truffles?


Here is where you can get really creative and have some fun. If you are making a batch of Holiday truffles for an adult party try adding 2-3 ounces of Kahlua, Bailey's Irish cream, RumChata or just a splash of rum. For the non drinkers and kids you can roll the chocolate truffles in:


  • Crushed Nuts
  • Candied Sprinkles
  • Cocoa Powder for some lovely Cocoa Powder Truffles
  • Caramel and Sea Salt for Salted Caramel Truffles
  • Cereal for the kids
  • Bacon Bits
  • Coconut Flakes
  • You can even infuse some caramel or jelly into the center of your truffles for a surprise burst of flavor..

How long do fresh homemade truffles last?

Homemade chocolate pieces will last up to a year. However, any filled pieces such as caramels, creams, jellies or toffee have approximately a 6 to 8 week shelf life. Truffles have approximately a 2 to 4 week shelf life due to the fact that they are made with fresh cream.

Can I eat chocolate on Weight Watchers?

Ingredients

  • 12 ounces of Chocolate Chips

Instructions

Pour your chocolate chips into a stainless steel mixing bowl.
