Strawberry & Angel Cake Pudding Trifle

Do you love trifles? I LOVEE them! The combination of cake with cream and fruits is heavenly. I remember the first time I had a trifle was years ago when a family friend made it for a party at their place. I was utterly blown away by how delicious it was. Ever since then, I have found myself making trifles a lot.
One good thing about trifles is that they can be made with various fruits such as berries, bananas, and stone fruits like Peaches, Plums, etc. Also, trifles are a perfect spring/summer dessert! With the wide availability of fruits, it makes it a great choice.
This trifle here has a twist. A pudding and cream mix you’ll love. For the cake, Angel food cake or Chiffon cake, anything that soaks in the cream well. I have stewed the strawberries slightly to blend well with the cake and cream mix when chilled.
- Make the pudding cream mix: To make the cream, combine pudding mix with chilled milk and set aside. Whipe up heavy cream, fold the pudding mix into the whipped heavy cream and leave to set.
- Stew the Strawberries: In a saucepa, combine strawberries,sugar,water,cornstarch and cook on low flame till reduced and thickened.Leave to cool
- Layer the trifle: In a trifle dish, start by layering the pudding cream mix followed by crumbled cake peices . More cream and then a layer of the stewed strawberries. Repeat the layers until pudding cream mix is the top layer. Chill for 4 hours and serve .
When the strawberries are stewed, they are juicier and softer in texture. They also help soak those crumbled cake pieces and the pudding cream mix for a delicious bite. Some recipes call for strawberry jam or preserves. I like this version better since you can control the sweetness of the stewed strawberries, and they go well with the rest of the ingredients!

- Fresh Strawberries
- Cornstarch
- Sugar
- Vanilla extract
- Lemon Juice

Ingredients
- 1 lb Fresh strawberries , rinsed and sliced
- 1/4 cup Sugar
- 1/2 cup Water
- 1 tsp Lemon Juice
- 1 tsp Cornstarch Slurry
- 1 tsp Vanilla Extract
- 1 Angel Food Cake
- 1 3.4oz Vanilla Pudding Mix
- 2 cup Chilled Milk
- 1 cup Heavy Whipping Cream
- 1 tsp Vanilla Extract
- Fresh strawberries to garnish
Instructions
- Put together sliced strawberries, sugar ,water, and vanilla extract in a saucepan on medium to low heat . Once it starts boiling, reduce the heat and add the lemon juice and cornstarch slurry. Keep cooking until it reaches a semi-thick consistency. Then, turn off the flame and set it aside to cool completely.
- To make the pudding cream mix, combine chilled milk and the vanilla pudding mix. Using a whisk, combine well till it starts to thicken. Cover and refrigerate for 30 minutes.
- Meanwhile, using a whisk attachment , beat the heavy whipping cream along with vanilla extract until it reaches stiff peaks. Fold it with the prepared pudding mix and refrigerate until ready to use.
- Crumble the cake pieces or slice the cake into equal parts. Start layering in the trifle dish, starting with the pudding cream mix, then the cake pieces. Now add a layer of the cooled stewed strawberries.
- Another layer of pudding mix, and the exact steps follow. Repeat until you have a pudding mix layer on the top, and finally garnish with fresh strawberries.
- Chill for a minimum of 4 hours or overnight. Taste best when chilled and eaten.
Tips
- You can add a layer of fresh sliced strawberries between each layer if you prefer.
- It is best preferred if you can make your cake, but store-bought will also do and is much easier.
