Atta Halwa, is a rich, velvety smooth halwa made with whole wheat flour, ghee, and sugar. This super indulgent treat is perhaps the simplest Indian dessert to make, that's ready in just 20 minutes! Atta halwa is one dessert which I grew up eating as my mom made it very often in her kitchen. This delicious dessert is made during festival seasons and offered as prasad. Atta ka halwa is one such traditional north indian sweet prepared especially during navaratras. it is mainly served especially during fasting. I enjoyed a tbsp of Halwa with hot Poori and Kala Chana.

The traditional recipe uses a ratio of 1:1:1:1, which means, for every 1 cup of flour (atta), you use 1 cup each of sugar, ghee, and water. In this recipe I have added 1 more cup of water that is 2 cup of water for making the Halwa more smooth. Firstly, do not alter the ratio of ghee, wheat flour, sugar and water (1:1:1:2) and it's very important to dry roast the wheat flour first before adding ghee as it makes the Halwa more flavorful. Additionally, use coarsely ground wheat flour to get nice texture. And, roasting the wheat flour in ghee on low to medium flame makes the Halwa aromatic and turn dark golden brown which means wheat flour has cooked completely.

You can customize it by adding some chopped dryfruits, Mawa or any flavour as per your taste and enjoy this indulgent dessert any time of the year. This luxurious halwa literally melts in your mouth.

Ingredients

  • 1 cup wheat flour
  • 1 cup clarified butter/Ghee
  • 1 cup sugar
  • 2 cup water
  • 1/4 tsp cardamom powder  
Instructions

Firstly, in a large kadai dry roast wheat flour for 2 to 3 mins or until its aromatic.
Now add ghee and mix well without forming any lumps.
Roast wheat flour on low to medium flame stirring continuously.
After 10 minutes, the mixture will start to turn golden and aromatic.
Meanwhile boil take 1 cup sugar and 2 cup water.
Stir well boil for 2 to 3 minutes or until sugar dissolves.
After 20 minutes, the mixture will turn dark golden brown which means wheat flour has cooked completely.
Pour the hot boiling sugar syrup over wheat mixture stirring continuously.
Be careful as the mixture will splutter.
keep stirring continuously, till the wheat flour will absorb all the water.
Continue to cook for 5 minutes stirring continuously without forming lumps.
Now add cardamom powder and mix well.
Finally, serve Atta ka Halwa hot or warm.
Tips
  • Firstly, do not alter the ratio of ghee, wheat flour, sugar and water (1:1:1:2).
  • Roast the wheat flour on low to medium flame to prevent from browning.
  • Additionally, use coarsely ground wheat flour to get nice texture.
