Ingredients
Cake
  • 2.5 cups self raising flour
  • 1 cup light brown sugar
  • 1 tsp cinnamon
  • 1/3 cup canola oil
  • 2/3 cup milk of your choice (I like soy milk)
  • 1 cups dates, pitted and roughly chopped
Sauce
  • 3 cups boiling water
  • 2/3 cup light brown sugar
  • 2 tbsp date syrup
  • 80 grams butter
Instructions

Preheat the oven to 180 degrees Celsius (355 degrees Fahrenheit).
In a large mixing bowl, combine the flour, sugar and cinnamon until well incorporated. Add in the oil and milk.
Gently fold in the dates and pour batter into a large oven proof deep dish.
In a small het proof bowl, make the sauce. Mix together the water, sugar, date syrup and butter until all combined.
Pour the sauce over the batter and place dish into the oven.
Let the pudding bake for 30 minutes, it should have turned golden and might be wobbly in the middle.
Remove from the oven and serve hot.
