Basic Chocolate Pudding

Chocolate Pudding was always a special treat in my house. My Mom would make this sweet treat once in a blue moon. And when she did, we all would devour it as soon as we could. Chocolate Pudding is one of the simple pleasures of my childhood. I can remember it like it was yesterday.
One thing I have learned about making pudding is that it takes some time. Pudding needs to thicken and I sometimes don't get it right. It takes about 18 minutes to thicken. Luckily, I get it right more times than I don't.
The funny thing is that my Family raves about this simple recipe. Like I spent hours in the kitchen making this pudding. And they always ask if we can have it more often. Try it yourself and see!

Basic Chocolate Pudding

Ingredients
- ¾ cup sugar
- 2 tablespoons cornstarch
- 2 2/3 cups milk
- 4 beaten egg yolks
- 1 tablespoon butter
- 1 ½ teaspoons vanilla
- 1/3 cup unsweetened cocoa powder
Instructions
- In a medium heavy saucepan combine sugar and cornstarch. Stir in milk. Cook and stir over medium heat until thickened and bubbly. Cook and stir for 2 minutes more. Remove pan from heat. Gradually stir 1 cup of the milk mixture into egg yolks.
- Add egg mixture to milk mixture in saucepan. Bring to a gentle boil; reduce heat. Cook and stir for 2 minutes more. Remove pan from heat. Stir in butter and vanilla. Pour pudding into a bowl. Cover surface of pudding with plastic wrap. Serve warm or cold (do not stir during chilling). Makes 6 servings.

What type/percentage milk ?
Do you add the cocoa powder with the sugar and cornstarch?
