Make these Pineapple Popsicles and you will have a fresh, creamy, and delicious frozen treat in no time. It only takes 2 ingredients to create this low-calorie dessert.


As I mentioned, you only need 2 ingredients for these pineapple popsicles: pineapple and coconut milk. Fresh pineapple and full-fat coconut milk will give you the best results as far as taste and texture but see below for some substitute options.


You can use canned pineapple for this recipe. And, since you are blending the pineapple before freezing, you can use slices, chunks, or crushed pineapple.

If you do use canned pineapple, watch out for the extra sugar!

Ingredients

  • 1 cup fresh pureed pineapple (can substitute with canned pineapple)
  • 1 cup coconut milk
Instructions

Peel and slice a fresh pineapple into small pieces and place them into a blender or food processor. Blend for a minute or two and measure out 1 cup of puree.
Add 1 cup of full-fat coconut milk to the pineapple puree and stir to combine. Pour into a popsicle mold and place the mold into the freezer. Freeze overnight and enjoy the next day!
Tips
  • You can use canned pineapple for this recipe (slices, chunks, or crushed). If you do use canned pineapple, watch out for the extra sugar! Canned pineapple usually has more sugar and calories so if you do decide to use canned pineapple, look for one with no added sugar or is canned in fruit juice instead of syrup.
  • You can substitute full-fat coconut milk with low-fat coconut milk.
  • You will end up with some leftover coconut milk and most likely pineapple as well. Here are some ideas of what to do with the extras:
  • -Make more popsicles!
  • -Use in a pina colada (I mean, you are halfway there already) with or without alcohol
  • -Eat the pineapple and drink the juice
  • -Freeze both for later: add to an ice cube tray, freeze and store in a sealable container!
  • -Use the coconut milk in a savory dish like my Thai Red Curry Noodle Soup
