Is it as hot where you are as it is in Phoenix? We have already had a few days of 117ºF heat so I was dying for something to cool me off. In came Chocolate Peanut Butter Ice Cream with Hot Fudge Sauce and Sprinkles. I intensified the peanut butteriness in the ice cream by adding peanut butter powder. Peanut butter and chocolate are such a classic combo and this doesn’t disappoint. This goes great in a cone, but it is also just as good right of the container. Oh, and it doesn’t have to be a scorcher for you to enjoy this cold, sweet treat!

Ingredients

  • 1 ¼ cup sugar
  • 8 egg yolks
  • ½ cup cocoa powder
  • 2 cups half and half
  • 2 cups heavy cream
  • 2 tablespoons peanut butter powder
  • ½ cup peanut butter
Instructions

Measure cream and half + half into a 4 cup measuring cup.
Add ½ cup of the cream mixture and the cocoa powder to a medium saucepan. Heat over medium heat, whisking to combine. Once combined, add the rest of the cream mixture. Bring to a simmer, making sure to stir often.
In a large bowl, whisk together the egg yolks and sugar. Slowly whisk in about half of the cream mixture. Pour that mixture back into the pan with the remaining heavy cream/milk mixture. Continue to cook on medium heat until the mixture is thick enough to coat the back of a spoon.
Remove from the heat and whisked in the peanut butter powder. Pour through a sieve. Let cool to room temperature, whisking constantly.
Cover and put in the refrigerator to chill completely.
Once it has chilled, transfer it to the bowl of an ice cream maker. Churn until the mixture is almost the texture of frozen yogurt. Add the peanut butter.
Transfer to a plastic container and freeze to desired consistency.
Tips
  • The 3 hours prep time includes chilling the base in the refrigerator, but you will also need to put the churned ice cream in the freezer for several hours to set.
