You'd think we were having a big family reunion each time we get together to celebrate something! I guess it is like a family reunion, in a way!

We had so many people at my grandfather's 80th birthday celebration in February that we actually had a hard time getting everyone to fit into our family photo.

We had my uncle and his girlfriend come all the way from Denmark to celebrate with us, my great uncle came from his assisted living facility, and my grandfather's long-time best friend in attendance as well. It was fantastic!

As you can probably imagine, we need lots and lots of sweet treats whenever we have a family gathering, in order to keep everyone happy - especially the little kids!

I know that some love to make their own lemon curd, but I am just not that adventurous. Whenever I can successfully employ a shortcut in my recipes, I gladly do so!

Ingredients you will need to make Lemon Curd Cake Trifle

• 1 loaf, 11 oz, angel food cake (or you can bake an angel food cake from a box mix like Duncan Hines)
• 1 small package, 3.4 oz, instant vanilla pudding
• 2 cups milk
• 1 jar, 10 oz, lemon curd
• whipped topping

You are going to need mini trifle bowls, or mini dessert cups for this Easy Easter Lemon Trifle Dessert Recipe. You can find a wide assortment of trifle and dessert bowls on Amazon!

Directions for how to make Easy Lemon Curd Cake Trifle

First, place the pudding mix and milk into a medium mixing bowl and whisk it briskly for about two minutes, or until smooth.

Once done, refrigerate the pudding mixture for five minutes.

Next you are going to use a bread knife to cut the angel food cake loaf into 12 slices. Cut each slice into small ½" cubes, like so.

Now you are going to work on presentation. Start by placing two slices of cubed angel food cake into the bottom of a mini trifle bowl. Top with one large dollop of the pudding and then add a dollop of the lemon curd.

I prefer about a tablespoon sized dollop, but you can adjust this according to the size of your trifle bowls and the presentation you are going for.

Add the whipped topping right before serving. Repeat in 5 remaining trifle bowls.

This Lemon Curd Cake Dessert Recipe serves 6, but you can easily double or even triple the recipe to create a full sized trifle dish!

For bigger families, I find that full sized desserts are easier to manage.
